Wine Making

40% whole bunch pressed which simply means that the grapes were not removed from the stalks, this gives a slight green and fresh flavour to the wine. Fermented with wild yeast and matured in French Oak Puncheons

Taste Profile

Black fruits & dark cherry with underlying savoury notes and a hint of the forest floor!

Food Pairing

A very versatile food pairing wine given its higher high acidity and lower tannin. Pinot Noir particularly a lighter bodied variety pairs well with charcuterie, ham, duck, chicken, pork, goat cheese, and fresh green vegetables like asparagus and mushrooms
