Hand harvested and gently de-stemmed, this Pinot Noir was allowed to ferment naturally with indigenous yeast and spent 6 months maturing in French Oak barrels.
Bouquet has elements of dark cherry, warm spice, thyme and floral characters
A very versatile food pairing wine given its higher high acidity and lower tannin. Pinot Noir particularly a lighter bodied variety pairs well with charcuterie, ham, duck, chicken, pork, goat cheese, and fresh green vegetables like asparagus and mushrooms
