Blanc de Blanc, meaning white from white in French is a sparkling variety made purely from white grapes. In this instance we have made ours from 100% Chardonnay grapes sourced from the Macedon ranges, this is the only grape we use in our wines that isn’t Estate grown.

Wine Making

This Blanc de Blanc was made in the traditional méthode champenoise, which requires a secondary fermentation in the bottle. This secondary fermentation is accomplished by adding a mixture of sugar and yeast to still wine. This wine is then bottled and capped, with a bottle cap similiar to ones found on beer bottles – not a cork.

The yeast acts on the sugar and the resulting carbon dioxide remains trapped in the bottle. Quality sparkling wines are usually left on their yeast for several months, even years. This particular Blanc de Blanc has been left for 6 years before it was disgorged; meaning the cap was removed and replaced with the traditional cork with wire cage.

Food Pairing

Similar to Champagne, Blanc de Blanc is an exceptionally versatile wine however it is best paired with Fish & Shellfish, particular oysters as well as Parmesan based dishes
